Chef Scott Davies joins the Old Manse of Blair in Perthshire

He was previously based at the Three Chimneys on the Isle of Skye for nine years.

Scott Davies has been appointed executive head chef of the Old Manse of Blair in Perthshire.

 

He joins from the Three Chimneys restaurant with rooms on the Isle of Skye, where he was based for nine years as executive head chef.

 

Davies, who attended catering college in Dundee, also worked as head chef at Russacks hotel and the Adamson in St Andrews before starring in the 2013 series of MasterChef: The Professionals.

 

At the Old Manse of Blair, he will be offering dishes such as Rossie Ochil partridge served with garden carrots, Cullisse Highland rapeseed and cider butter sauce; Benalder Cairngorms Glencalvie red deer with haggis, Scottish brambles, Jerusalem artichoke, and honey berry wine; and Atholl Brose parfait with Scottish Bee Company blossom honey.

 

Davies said: “I’m excited to bring a strong sustainability ethos to the Old Manse of Blair. Perthshire is Scotland’s heartland, with stunning woodlands, local farms and wild rivers. The landscape alone is unforgettable, and we hope to make your culinary experience equally memorable, a true testament to this incredible location.”

The Old Manse of Blair in Blair Atholl, near Pitlochry, was built in 1828 and features the Orangery restaurant, mansion house rooms, walled garden rooms and a renovated railway cottage.
