Chef Roy Brett to close and relocate Edinburgh restaurant Ondine

The Scottish chef opened Ondine Oyster & Grill in 2009, which is listed in the Michelin Guide.

Chef Roy Brett has revealed plans to close and relocate Ondine Oyster & Grill in early 2025.

 

Brett opened the seafood and shellfish restaurant in 2009 in Edinburgh’s Old Town.

 

In 2021, he invested in the exterior of the restaurant to emulate a ship at sea, but “due to unforeseen circumstances” it was covered in scaffolding.

 

He was recently told the works will continue for “much longer than previously anticipated”.

 

Brett said: “This being the case we have reached the point where we feel our amazing team and loyal customers deserve better.

 

“So, after 15 fantastic years, we have decided that our time here must come to an end, and our final service will be our Hogmanay Celebration on 31 December.”

 

He added: “This is not a decision we have made lightly. Ondine means so much to many, not only to myself and my family but also to our customers, who have almost become family over the years.

 

“I want to extend a heartfelt personal thank you to every single one of you who has dined with us. Your support means everything to us, and I hope to welcome back to Ondine as many of you as is possible over the next seven weeks.”

 

Further details of the new Ondine situated in Edinburgh city centre will be revealed “very soon”, he said.

 

Ondine Edinburgh is recommended in the Michelin Guide Great Britain and Ireland, although it does not hold a star or Bib Gourmand. The red book praises the restaurant as “one of the most popular places in Edinburgh for fish and shellfish”.

 

Brett is due to open his first restaurant outside of Edinburgh at the Seaton House hotel in St Andrew next spring, plans for which were revealed late last year.

 

Seaton House is a Victorian townhouse that was formerly known as the Scores Hotel.

 

It is being redeveloped by the US-based Links Collection and will be operated by management firm Valor Hospitality Partners.
