The new management comes after former owners Bryan and Susan Webb put the restaurant with rooms up for sale last year.
Chef Gareth Stevenson, the former head chef of the Green Michelin-starred Palé Hall restaurant near Llandderfel, has taken over the Tyddyn Llan restaurant with rooms in Llandrillo.
Tyddyn Llan was previously owned by chef patron Bryan Webb and his wife Susan, who operated the business for 22 years before selling it in February this year.
The 13-bedroom property was built in 1742 and more recently was the private shooting lodge of the Duke of Westminster.
It held a Michelin star for 10 years and remains in the Michelin Guide Great Britain and Ireland.
Stevenson revealed plans to ‘soft relaunch’ Tyddyn Llan on 18 July with the Webbs also staying on until the end of the month to support the transition into new ownership.
The new Tyddyn Llan will be “chef-led”, offering local, low-waste Welsh cuisine embedded with a “Green star ethos”, as well as interiors, crockery and artwork that showcase artisanal Welsh talent.
The chef was raised in Leicestershire to a Welsh father and first received recognition at Palé Hall hotel in north Wales, where he opened a fine dining restaurant with Michael Caines that went onto receive a Green Michelin star for its commitment to local producers.
He will be supported by head pastry chef Robin Evans and current Welsh Chef of the Year, Josh Morris.
Stevenson said: “Having lived in the village for eight years, I have often dreamed about having the opportunity to run a restaurant such as Tyddyn Llan. It is housed in a beautiful Georgian building and the opportunity to lead it into its new chapter is both a massive honour and tremendously exciting.”
Bryan Webb added: “With Gareth as the new chef patron and Maria [Stevenson’s partner] the face of the front of house, together with their highly talented team, they will keep Tyddyn Llan at the top of the restaurant business and ensure that it continues as one of the finest restaurants in Wales, and the wider UK. We wish them every success.”
