Dale Osborne, previously executive chef of London's Aqua Shard, is heading up the UK debut of international restaurant group Bagatelle, which is set to open in Mayfair this month.
He joins the French-Mediterranean restaurant with 22 years' experience of working in high-profile operations, including Michelin-starred Orrery, the Wolseley, St Alban, Hix Soho, Dinner by Heston Blumenthal, and Chiltern Firehouse where he oversaw the launch with Nuno Mendes.
Osborne's menu at Bagatelle is expected to involve light, seasonal and refined Mediterranean food with influences from classical French cuisine.
Dishes will include: tartare de thon Bagatelle, a yellowfin tuna tartare with bruinoise-cut avocado, lime and soy vinaigrette finished with taro crisps; and steak t-bone au feu de bois cooked over an open charcoal grill, served alongside hasselback potatoes, vine tomatoes and with freshly made béarnaise sauce.
The restaurant will accommodate 120-covers across two floors, with dining upstairs and a downstairs lounge.
Osborne, executive chef, commented: "After being classically trained in the south of France and visiting family in Spain and Italy each year, I have a huge passion for the cuisine of the Mediterranean and so working for Bagatelle gives me a chance to embrace the amazing produce and dishes of the region."
The Bagetelle restaurant group opened its first outlet in New York in 2008 and now runs 11 venues around the world, including sites in Miami Beach, Los Angeles, St. Tropez, Sao Paulo, Dubai and Ibiza.
