Chef Aldo Zilli joins Undercroft restaurant

It comes after Brad Carter was confirmed to have parted ways with the team behind the project.

Chef Aldo Zilli is set to launch a restaurant in a church crypt in London’s Mayfair, taking over from Brad Carter, who was initially involved in the project.

 

In April this year, it was announced Carter, the chef behind Birmingham’s Carters of Moseley, would open his debut London restaurant in the summer underneath St George’s Church as the Undercroft.

 

It was later confirmed he was no longer part of the launch after parting ways with the team.

 

Zilli has now joined forces with music publisher Martin Priestnall and Michael Kill to launch the Undercroft as an Italian restaurant next month, which marks his return to the capital after almost 20 years.

 

 

The celebrity chef had previously collaborated with Manchester-based Italian restaurant group San Carlo to create dishes for its Cicchetti restaurants.

 

He was also the founder and chef-patron of restaurants such as Signor Zilli, Zilli Green, Zilli Café and Zilli Bar.

 

His Italian seafood restaurant Zilli Fish in London’s Soho operated for over 15 years until its closure in March 2012.

 

 

Dishes at the Undercroft will include the likes of whole lobster taglioni, monkfish porchetta, slow cooked beef rib and veal escalope saltimbocca.

 

There will also be a chef’s table offering led by Zilli himself.

 

Guests will be able to dine to a changing programme of live music entertainment, piano recitals and curated art displays.
