Butchies to open first bricks and mortar site

Street food fried chicken brand Butchies is to open its first permanent site in London's Shoreditch.

Founded by Garrett and Emer Fitzgerald (pictured), the Rivington Street site will accommodate 45 covers and serve a range of wings, sides, salads and specials alongside craft beer from a vending machine.

The restaurant's kitchen is believed to be the first in the UK to use a pressure fryer, imported from the US, which is claimed to allow optimal cooking of fried chicken.

Butchies began at London's Broadway Market in 2014 serving dishes inspired by New York fried chicken restaurants such as David Chang's Fuku in New York. The menu features six free-range fried chicken sandwiches, including the Original with house pickles and Butchies' homemade garlic and fresh herb aïoli (£6), and Cheesy Rider, served with house pickles, Butchies' hot pineapple reaper sauce and Red Leicester cheese.

Founder Garrett said: "Packing in the desk job to start Butchies four years ago has been one of the best decisions I've ever made. Bigger queues combined with selling out earlier and earlier each week at Broadway Market made us realise we were on to something really special.

"It's been a wild ride and we are outrageously excited about this huge step. Having lived and worked in East London for the past 10 years, it is amazing to be giving our award-winning fried chicken a permanent home in our own backyard."
