Champagne and hotdog concept Bubbledogs is to return for a summer pop-up after a four-year hiatus.
Sandia Chang and James Knappett founded Bubbledogs in 2012 upstairs from their London restaurant Kitchen Table, which won its first Michelin star in 2014 and a second in 2019.
The pair decided to retire Bubbledogs in 2020 and move the Champagne arm online to make more space for the expanded Kitchen Table.
Now the original concept is set to return with a pop-up on the terrace of the Dorchester Collection’s 45 Park Lane hotel in Mayfair. It will run from 10 May until 29 September under the name Bubbledogs at 45.
Chang and Knappett have partnered with 45 Park Lane’s executive chef Elliott Grover to create the menu, which will showcase ingredients from the Franconian Sausage Company and the CUT Pastry Kitchen.
A variety of hot dogs will be on offer, including the Native Dog, featuring crispy native lobster tempura, Marie rose sauce and beluga caviar; the Kagoshima, with A5 Wagyu striploin, Japanese mayo, shaved summer truffle; and Fourth of July, which consists of spicy BBQ sauce, coleslaw and crispy bacon.
A chocolate dessert hot dog with Jiavara chocolate ganache on cinnamon brioche with a cherry and passionfruit sauce will also be available.
Grover said: “This partnership will offer a unique dining experience with innovative and fun dishes. For devoted Bubbledogs enthusiasts, it's the perfect chance to savour their beloved gourmet hotdogs again and enjoy the summer on our beautiful terrace.”
The pop-up will open daily for lunch and dinner from 10 May until 29 September.
