Doni Ramalho has been appointed general manager of Brigade Bar + Kitchen, a social enterprise restaurant specialising in live-fire cooking.
Ramalho will oversee operations and marketing at the London Bridge-based restaurant as well as working closely with Beyond Food Foundation, which has a partnership with the restaurant to offer training opportunities to vulnerable people or those who have fallen on hard times.
He said: “I’m delighted to be joining the restaurant. The live-fire cooking techniques used by the team are wonderful and help to create some fantastic dishes. Also, to be able to do what you love and support the brilliant training programmes at the restaurant is fantastic.”
He has replaced Jon Cannon, who left in April and has since joined the New Inn in Hurstpierpoint, West Sussex, as general manager.
Ramalho joins the restaurant from Battersea Power Station, where he headed food and hospitality services for high-end residential properties as a BaxterStorey representative, holding roles as both a general manager and group manager.
He previously worked as an Emirates lounge manager for DO & CO Group, and held roles at Sushisamba, where he managed the bar operation, as well as overseeing Searcys Champagne bars at Westfield Stratford Searcys and St Pancras in London as a general manager.
