The chef behind the Michelin-starred Carters of Moseley restaurant in Birmingham has opened a kebab shop in Manchester today (6 October).
Brad Carter started One Star Döner Bar as a takeaway business when his main restaurant was forced to close during lockdown.
Now he has opened a permanent site at Escape to Freight Island, a 2,000 capacity urban market at Manchester’s Depot Mayfield.
Carter was inspired after eating kebabs served by street food traders in Berlin. His kebabs are served on pide flatbreads sourced from a nearby Turkish bakery and used produce such as Cornish lamb, Tamworth mortadella and Cotswold white chicken.
Two shawarmas are on offer, the Mortadöner, using mortadella, shredded cabbage, cavolo nero and hot sauce; and the Bonedöner with chicken, kebab van salad, pickled chillies and roast garlic mayo.
A Lamb Döner is served with kebab van salad, smoked chilli sauce, minted yoghurt and grilled pointed peppers, while Carter’s signature potato smileys are served as a side with either hot wing mayo or cacio e pepe sauce.
Carter and his partner Holly Jackson opened Carters of Moseley in 2010. It won a Michelin star in 2015 and also holds three-AA-rosettes.
