Bone Daddies promotes MD as co-founder steps back

Former operations director of Bone Daddies Group Steve Hill has been promoted to managing director.

The news follows the recent retirement of Demetri Tomazos, co-founder of both Bone Daddies and Flesh & Buns brands alongside Ross Shonhan, who left the company in March 2020.

Hill, pictured left with executive chef Tom Moxon, joined the group as operations director in October 2018, having previously held similar senior operations roles with the Jamie Oliver Group, Novus and TGI Fridays.

Hill said: “I am encouraged by a successful 10th anniversary year for Bone Daddies in 2022 and relish the opportunity to lead our teams at both Bone Daddies and Flesh & Buns brands onto our next chapter. Our people have always been core to the business, and we remain committed to staff investment and training across the board, with some exciting expansion plans in the pipeline which we hope to announce over the coming months.

“I would like to wish Demetri all the best, it’s been a privilege to work alongside him over the last four years.”

Ramen restaurant Bone Daddies opened on Soho’s Peter Street in late 2012, followed by a second restaurant serving baos, Flesh & Buns, in Covent Garden in the summer of 2013.

Japanese pop-up Shack-Fuyu opened on Old Compton Street, Soho in early 2015 before relaunching as a permanent restaurant site in December of the same year.

The Bone Daddies Group employs more than 400 staff and has seven Bone Daddies ramen bar sites in London, two Flesh & Buns’ izakaya sites, as well as stand-alone restaurant Shackfuyu in Soho.
