These low- or no-alcohol but full-flavoured beverages are perfect for shaking up a summer spritz or creating a grown-up soft drinks list for the moderation movement
With the rise in alcohol moderation and sober-curious guests, operators need to offer a wide range of alcohol-free alternatives to cater to those who want all the taste without the after-effects. Your alcohol-free offering should be more than just a soft serve: for example, the new generation of alcohol-free wines from French brand moderato is produced by extracting the aroma of regular wine to add more body to the free-from experience, and a sommelier is behind the Copenhagen sparkling tea range, where the delicate flavours of the fizz can create a subtly flavoured match for desserts. This is alcohol-free for the more sophisticated palate.

French de-alcoholised wine brand moderato has launched Cuvée Révolutionnaire, a new line of low-alcohol wines. The 0.5% abv range comprises four wines: zesty Colombard, spiced Merlot-Tannat with notes of black fruits and vanilla, 100% merlot Blanc de Noir, and Gros Manseng Merlot rosé. For the new wines, which have been designed to be enjoyed with food, moderato has used the technique of aroma recovery, or True2Aroma, during the low-temperature vacuum distillation of the base wines, which allows the aromas to be separated from the extracted alcohol and then added back to the end product.
