Anton Vasyliev named executive chef at Ukrainian restaurant Mriya

Anton Vasyliev has been named executive chef at Ukrainian restaurant Mriya, which launched two years ago in London’s Chelsea.

Ukrainian chef Yurii Kovryzhenko and co-founder Olga Tsybytovska opened the neo-bistro in 2022 with a team of Ukrainian refugees who had previously worked as teachers, chefs and bakers.

Now, the restaurant is undergoing a refresh following the appointment of Vasyliev, who joins from Sugaar in Paris.

The chef was born and raised in Kyiv, where he began his career in the hospitality industry. He then travelled across Asia and Europe, settling in Paris, where he was based for the past two years.

A post on Mriya’s Instagram read: “As a visionary chef, Anton Vasyliev has reimagined our menu and concept, staying true to our core values by drawing on Ukrainian heritage and a passion for creativity.”

The restaurant currently serves dishes such as Chicken Kyiv, potato varenyky and Borscht with beef rib and pampushkas.
