Annabel's appoints culinary trio for new club

Renowned London club Annabel's has announced the appointment of the executive chef team which will oversee the all-day dining operation in its new home.

 

Set to open later this year, the club is moving to larger premises in an 18th century, Grade I-listed townhouse, two doors down from its existing location on Berkeley Square.

 

New executive chef of the Birley Clubs is Julien Jouhannaud, who has been appointed from Le Bilboquet in New York, where he oversaw the restaurant’s opening in 2013. He previously worked for French three-Michelin-star chef Alain Ducasse in Monaco, Singapore, Washinton DC, Las Vegas and New York for 11 years.

 

Annabel's gardenGuillaume Glipa, executive director the Birley Clubs, said: “Jouhannaud’s devotion to his craft, uncompromising standards and meticulous work ethic are just three of the countless reasons why he was the natural choice for the role and why he will be instrumental in the shaping of the new club’s culinary offering.”

 

Jouhannaud has been joined by Christophe Marleix as the club’s brasserie head chef and Ryan Brown as head chef for Annabel's Nightclub.

 

Until recently Marleix was head chef at the Grill at London’s Dorchester hotel. He spent nearly 10 years with the Dorchester Collection, having initially joined the luxury hotel group in Paris at the Hôtel Plaza Athénée as chef de partie of the hotel’s Le Relais Plaza, before working his way up to chef de cuisine of La Cour Jardins and executive sous chef of the hotel.

 

Originally from Canada, Brown has worked in the US for Thomas Keller at Bouchon in Napa Valley, California, and in France for Mauro Colagreco at the Mirazur, Menton. He arrived in London in 2012 at the Michelin-starred L'Atelier de Joël Robuchon, before joining Oblix in the Shard as sous chef, eventually rising to head chef, the following year.

 

The original Annabel's, which was founded in 1963, will continue to operate at 44 Berkeley Square until the new club at number46 is ready later this year. Martin Brudnizki Design Studio, which was involved in the interiors of the Ivy and Sexy Fish, also owned by Caring, is overseeing the interiors of the new premises.
