Chef Andrew Sheridan is to launch his debut restaurant, 8, in the ICC Birmingham in October.
Sheridan, who was previously at the helm of the Stargazy Inn in Port Isaac, Cornwall, has based the concept around the number eight and will showcase his career so far across an eight-course menu.
The 16-cover restaurant will open with a reduced capacity of eight seats on 8 October, with a single evening sitting at 8pm.
Courses will be inspired by Sheridan’s culinary development, including the first dish the chef made in college. The menu outlines a celeriac and pistachio dish named ‘the square root of eight’ and a venison dish entitled ‘resurrection’.
Sheridan will continue to head up Craft Dining’s food offering in the same building alongside his new venture.
