Ambrette restaurants to host ‘food waste' charity dinners

Chef Dev Biswal's Ambrette restaurants in Margate, Rye and Canterbury are set to hold a series of charity dinners to highlight the enormous quantities of food wasted in Britain.

 

Biswal, who appears on Channel Four's TV series "Superscrimpers", will create a six-course gourmet tasting menu, using ingredients that are often discarded by restaurants, supermarkets and domestic kitchens alike.

 

Some of the commonly wasted ingredients expected to feature in the group's "Waste Away" dinners are chicken skin, cauliflower stalks, fruit peelings and beef trimmings.

 

The first of the dinners will be held on 17 August in Rye, then 31 August in Margate and again in Canterbury on 3 September.

 

The menu, which will cost £39.95, will feature mouldy cheese soup, crispy fried chicken skins marinated in mango, ginger and chilli and a sweet offering of squeezed lemon posset with summer vegetable peelings cooked in fennel seeds and a sugar and cinnamon compote.

 

Biswal said: "The goal is to create consciousness about food waste and donate proceeds raised from the "Waste Away" dinners to help alleviate the dreadful humanitarian situation in south Sudan."

 

The money raised will go to the South Sudan Red Cross.
