Ollie Wyatt has been named head chef of the Alverton hotel in Truro, Cornwall.
Wyatt has over 10 years’ experience in the industry and was previously sous chef at Michael Caines’ the Cove in Falmouth.
At the two-AA-rosette restaurant in the Alverton, Wyatt plans to cook with high-quality, locally sourced ingredients that focus on Cornish land and water.
He will also be introducing a tasting menu, with the first one – a ‘Taste of Truro’ Game Evening – due to launch on 24 November, priced at £60 per person.
Example dishes include chicken terrine and pork tomahawk served with hasselback potatoes, sweetheart cabbage, apple jus and apple purée.

The 51-bedroom hotel resides in a Grade II-listed building that dates back to 1830.
