Michelin announced five Special Awards at the 2025 ceremony, with recipients including Adam Byatt of Trinity and Jorge Parades of Oma
Adam Byatt, chef-owner of Trinity in London, has been awarded the Mentor Chef Award at the Michelin Guide Great Britain & Ireland’s 2025 ceremony.
A number of chefs have worked in his kitchen over the past 18 years, including Tom Sellers, Angelo Sato and Graham Squire.
On receiving his award at the presentation ceremony at Kelvingrove Art Gallery and Museum in Glasgow tonight, Byatt said: “I’m quite dumbstruck, to be honest. I’m very grateful, but I have slight imposter syndrome.
“Ultimately, mentoring people and putting back into the industry, that legacy is what we’re here for. I certainly try and do my bit, and I love the industry and the people that are in it.”
Giving advice to the future stars of hospitality, he added: “It’s been said many times it’s not an easy industry; it is difficult, but get in front of someone who will invest in your future and commit the time to grow you and someone that inspires you. There’s no point wasting your time in front of someone that’s not into all those things, so get in front of the right person and stay there. Be humble and listen more than you talk."
Byatt remained on stage to present the Young Chef of the Year Award, which went to Ash Valenzuela-Heeger, chef and co-owner of Riverine Rabbit in Birmingham.
Further Special Awards Lorna McNee, head chef of Cail Bruich in Glasgow, present the Service Award to Jasmine Sherry, general manager of the Fish Shop in Ballater.
Speaking on stage, Sherry said: “We just love what we do and we love our restaurant. We love our guests; we’re all the way up in the top of the Highlands were a really small community and they really support us so much.”
Meanwhile, the Sommelier Award went to Zsolt Lukács, the owner and sommelier at Daróg Wine Bar in Galway.
Finally the Michelin Guide also revealed its Opening of the Year 2025, which went to Oma in London. The guide inspectors said Oma was “history and honesty in every mouthful”.
Executive chef Jorge Parades took to the stage to pick up the award, and was then taken by surprise as he was awarded the night’s first Michelin star.
He said: “I’m super-excited, this is a dream come true for me. It’s taken a long time to show where I am.”
The Special Awards were handed out at the Michelin Guide Great Britain & Ireland’s 2025 ceremony in Glasgow this evening, which saw Moor Hall in Aughton, Lancashire receive three stars, while two stars were awarded to the Ritz and Humble Chicken both in London, as well as the Hide and Fox in Saltwood, Kent.
