Any professional kitchen is always looking for the latest technology, whether that’s to freshen up a menu, free up staff for more creative cooking or to reduce outlay on utilities. This round-up of new commercial kitchen equipment showcases cutting-edge appliances incorporating artificial intelligence (AI), compact dishwashers with full-sized performance, and an ingenious way to transform a grill into a griddle.

 

AI-controlled baking

 

Unox has introduced AI-powered cooking with the Optic.Cooking accessory. It can be retrofitted to Unox’s X-Generation ovens – Cheftop-X and Bakertop-X – and uses a sensor to adaptively learn, recognise and cook a tray of food inserted into the oven, on any shelf. By closing the oven door, the software will automatically start the correct cooking program.

From grill to griddle

 

Synergy Grill Technology has released the Synergy Hybrid Griddle Bar Pack, compatible with all Synergy grills. The three-sided retaining wall slots between the grill bars, transforming a grill into a part-griddle. Each pack contains two plates: a solid steel plate suitable for smaller items such as eggs or stir-fry; and a solid steel plate with laser-cut slits for solid items such as burgers or fish. The latter provides all the benefits of a traditional griddle but with outlets to drain the fat, creating healthier dishes.

Efficient, integrated cooling

 

Fagor Professional has unveiled its iKold range, featuring more than 35 units, including upright cabinets, refrigerated counters, preparation counters, display cabinets and ice-makers. The range uses natural R290 and R600a hydrocarbon refrigerant combined with CFC-free, high-density water-based polyurethane insulation to minimise operating costs, with several units achieving Class-A certification on the Energy Technology List. The models are designed to integrate with an existing Fagor Professional setup, including cooking blocks, ovens, blast chillers and warewashers.

Big refrigeration performance with low consumption

 

German manufacturer Liebherr has launched two refrigerators: the stainless steel GN 2/1 fridge (model FRPSvh 6501) and professional combination fridge freezer (model FCFCvg 4032). The Climate Class 5-rated fridge is designed to deliver ample storage with a 480 litre capacity with low energy consumption. The combination fridge freezer is designed for smaller venues seeking professional-grade appliances that are efficient and compact. The new model features NoFrost freezing technology and has a large glass door with vertical LED lighting.

Dishwashing in compact spaces

Welbilt brand WMAXX has introduced its undercounter compact Optimaxx 500 dishwasher to the UK. It comes equipped with a water softener option and the WMAXX W Water management system, which reduces energy and water consumption. The unit is constructed in double-skin AISI 304 stainless steel, which also makes for a quiet running cycle, and has an easy to use control panel with multicolour backlight that shows the status of any of the four washing programs.
