Chef Tom Simmons' eponymous restaurant at One Tower Bridge in London is under new ownership and trading happily, according to the chef.
Simmons told The Caterer: "The restaurant is in new ownership, under a new refinanced company and is trading happily. Our staff, suppliers and ethos for the restaurant are entirely the same and we will continue to deliver the excellent food and service that our customers expect."
A notice posted to The Gazette earlier this week announced that Michael Durkan of Durkan Cahill had been appointed administrator to the restaurant, which serves British-French cuisine with a Welsh twist.
Berkeley Homes, the owner of the One Tower Bridge development, said it was confident in the restaurant, which opened last summer, following the restaurant's restructure.
Lois Thomas, Simmons' partner who oversees front of house, Dr Janet Rennie, Ian Watts and Harry Bush are listed as directors with significant control on Companies House under Tom's Place, the restaurant's holding company.
