The dining room at the Bingham Riverhouse hotel in London’s Richmond has relaunched under South African chef Vanessa Marx.
It comes after Steven Edwards, the 2013 MasterChef: The Professionals winner, closed his three-AA-rosette restaurant at the hotel in December.
Now the space has reopened as the Riverhouse Restaurant, serving a seasonal menu in a “relaxed and approachable atmosphere”.
Marx previously ran a restaurant in Cape Town and guest judged on Celebrity MasterChef South Africa. She has spent the last two years running the Bingham’s kitchen for private events and promotes a zero-waste ethos.
The Riverhouse Restaurant’s menu highlights wild and foraged produce and features coffee-grown oyster mushrooms cultivated in the Rooftop Farm in Wimbledon using waste ground coffee from the hotel.
Dishes include the mushrooms served alongside fermented nut and truffle cream on toast; wild boar ‘bourguignon’ with mushroom barley risotto; and cacao torte with reishi, cranberry and macca.
Marx said: “In this new world, transparency and sustainability are the currency, and I'm excited to continue this culinary journey at Bingham Riverhouse.”
The Bingham is led by Sama Trinder and is one of the only black female-owned hotels in the UK.
Trinder said: “We want to continue to empower women in business at Bingham Riverhouse and are thrilled to welcome Vanessa into her new role and watch her successfully lead the new restaurant concept at the hotel.”
The Riverhouse Restaurant is open to hotel guests, members of the Bingham’s members’ club and the public.
