The chef previously worked at two-Michelin-starred Claude Bosi at Bibendum and was part of the opening team at Brooklands by Claude Bosi at the Peninsula London.
Taz Sarhane is to take over as head chef at Michelin-starred Cycene in London as the restaurant enters its “next chapter”.
It comes after Theo Clench announced he had left his role as executive chef at the restaurant last week after just under two years.
Cycene opened at Blue Mountain School in London’s Shoreditch in October 2022 and won a Michelin star just five months later.
Sarhane, who joined the restaurant team in January, previously worked at two-Michelin-starred Claude Bosi at Bibendum and was part of the opening team at Brooklands by Claude Bosi at the Peninsula London hotel, which went straight into the Michelin Guide Great Britain and Ireland with two stars this year.
A post on Cycene’s Instagram page said: “Taz’s new direction for the menu will have a greater connection to British soil, using seasonally available ingredients to capture moments of time through preservation techniques.
“Focused on treating the tasting menu as a cohesive whole, the offering will usher in a new era of collaboration with British suppliers, farmers, fisherman and foragers alike.”
Cycene is designed to make guests feel as if they are dining in a private home and serves a £155, nine-course tasting menu in a 16-cover dining room.
