Aizle chef Stuart Ralston is to open his third restaurant in Edinburgh next March.
Tipo will be a 56-cover casual dining restaurant that will serve small plates such as fresh pasta, cured and aged charcuterie, cocktails and wines.
Ralston has gone into partnership with his group operations director Jade Johnstone for the restaurant while his brother Scott, previously executive chef at Compass Group Edinburgh, will be head chef.
“Jade and I have been talking about a new restaurant for a long time and it’s taken us a while to find the perfect location,” said Ralston.
“We want to offer a neighbourhood style restaurant that will focus on simple pastas, dishes to share and vegetables prepared in ways you’d find in Europe alongside artisanal wines.”
In 2014 Ralston opened Aizle, which does not offer a regular menu and instead presents guests with a list of ingredients for its six courses.
The more casual Noto restaurant launched in 2019 and it won a Bib Gourmand in the 2021 Michelin Guide Great Britain and Ireland.
