The chef had previously worked at the Wee Hotel Company restaurant as commis chef in 2005.
Paul Green has been appointed head chef at the Three Chimneys on the Isle of Skye.
Green, 38, has over 20 years’ experience in the industry, having worked with the likes of Simon Rogan, Michael Smith, Martin Wishart and Adam Reid.
He joins the Scottish fine dining restaurant with rooms from the Driftwood hotel in Cornwall, where he was head chef.
Prior to that, he was head chef at the five-AA-red-star Torridon hotel in the Scottish Highlands.
The Edinburgh-born chef attended Borders College and worked with former Le Manoir aux Quat’Saisons head chef Rene Gate at the Dryburgh Abbey hotel near Melrose.
Green also previously had a stint at the Three Chimneys as a young commis chef under Michael Smith in 2005.
He will now lead the kitchen team of the Three Chimneys at Colbost, as well as the Three Chimneys spin-off at Talisker, Skye’s oldest distillery, which was launched last spring.
Green said: “The Three Chimneys is where my passion for Scottish produce really ignited. Coming back to the island almost 20 years later as head chef has an even greater personal significance for me and an achievement that I’m extremely proud of.
“I’m committed to showcasing the provenance of ingredients and following the Three Chimneys’ sustainable ethos to source high-quality produce from local suppliers on the island and wider Scottish Highlands region.”
He added: “Ultimately, I aspire to build on the Three Chimneys’ long-established reputation. Skye is unashamedly blessed with an abundance of local seafood, often sourced from the shores right in front of the restaurant. This amazing seafood will be a headline feature on our menus alongside fresh game, meats and locally-foraged produce.”

The Three Chimneys opened in 1985 and in 2015 gained its first Michelin star, which it lost the following year.
It was sold to Gordon Campbell Gray’s Wee Hotel Company in 2019 after 34 years of Shirley and Eddie Spear’s ownership.
