Josh and Holly Eggleton are to launch a crowdfunding campaign to help launch their reimagined Pony Chew Valley restaurant this autumn.
The venture is located on the former site of the sibling’s Pony & Trap gastropub, which closed last year after coronavirus regulations forced them to rethink plans for the site.
The Eggletons will launch a Kickstarter campaign in two weeks to help relaunch the venue as a “produce-led restaurant, event venue, cookery school and kitchen garden”.
A post on the restaurant’s Instagram page said: “The Pony Chew Valley has undergone a complete physical transformation and this is the final stretch before we reopen with a brand new vision for our original space.
"We are looking to create food experiences that bring people together in a space to inspire joy, family connection and collaboration.”
Supporters of the Kickstarter will get early access to restaurant and event bookings and an invitation to the restaurant’s opening gardening party.
Josh and Holly, who won an Acorn Award in 2016, run the business along with their parents Gail and Chris and brother Scott.
The family took over the Somerset restaurant in 2006. It won a Michelin star in 2011 but lost the award in the 2021 Michelin Guide Great Britain and Ireland due to its closure.
Josh and Holly recently launched the Pony Bistro in Bedminster, Bristol, which serves British bistro-style dishes.
