Chef Merlin Labron-Johnson is set to open four bedrooms at the Michelin-starred Osip in Bruton this June.
It comes almost a year after he revealed plans to relaunch the original Osip as a larger restaurant with rooms, having secured backing from Johnny Smith and Daniel Willis, who are part of the team behind London’s Luca and Clove Club restaurants.
The pair recently launched their own hospitality group, Smith & Willis, after formally announcing their amicable split from Isaac McHale in November last year, who now retains sole ownership of the two-Michelin-starred Clove Club.
The rooms at Osip have been designed by Smith and pay homage to the building’s heritage as a 17th-century coaching inn. All rooms feature exposed beams, oak flooring and neutral décor, while the two duplex rooms include a freestanding bath tub.
Bathroom amenities are a collaboration between own-brand Maison Osip and Harvest, while the organic cotton robes are from Coconut Residence.
Bedroom guests will receive priority restaurant bookings for the night of their stay, alongside a complimentary breakfast, which will consist of the likes of baked bread with Tamworth speck ham, hay-smoked trout, fresh cheeses and yogurts, and pear and black cardamom Kouign-amann pastry with whipped Somerset butter.
Labron-Johnson launched Osip in 2019 in central Bruton following his success at London restaurants Portland and Clipstone. In 2021, Osip won its first Michelin star and in 2023 it was also awarded a Green Michelin star in recognition of its sustainable practices.
The rooms at Osip are priced at £300 per night, including breakfast.
