Ian Swainson has been named as head chef of the Pass at South Lodge near Horsham, replacing Matt Gillan who spent 10 years at the Exclusive Hotel.
Swainson joins from the Samling in Cumbria, where he oversaw a kitchen that achieved three AA rosettes and has held a Michelin star for the past three years.
He was previously head chef at former Von Essen hotel Seaham Hall in County Durham, and spent four years at Murchison's La Bécasse in Ludlow under Will Holland.
Swainson will take up the role at the end of April, when Gillan leaves. Gillan is yet to reveal his next move.
South Lodge general manager David Connell added that he was looking forward to welcoming Swainson to the open-plan restaurant.
"Working within a few feet of our guests, Ian has a unique opportunity to showcase his culinary talent and engaging personality and offer diners a truly interactive and memorable dining experience,â he said.
