Menu Modern British - dishes include hand-dived Orkney sea scallops with pomme fondant, tomato jelly, baby herbs and parsley mayonnaise; Dornoch lamb with spinach purée, wilted greens, sprout leaves, rosemary mash and thyme jus; and broken lemon tart, yuzu parfait, frozen shortbread, pistachio purée, compact watermelon and coconut jelly.
