Tom Booton has been promoted to executive chef at the Grill at the Dorchester in London and announced several changes to the kitchen team.
In a post on Instagram, he confirmed that Adam Nevin has been appointed head chef.
Booton wrote: “He has been my right-hand man for many years and this is a huge, well-deserved promotion. It’s been a pleasure to watch him grow over the last seven years, and I couldn’t be any prouder of him!”
Freddy Wilson has been promoted to sous chef. Booton said: “He has also been an enormous support for me over the last six years, and this new role is very well deserved.”
Joshua Ausena and John Cain have been promoted to junior sous chefs. “They have both been a massive support for all the chefs in the team, and I can’t wait to watch them continue to grow in their new positions,” Booton said.
Booton, a 2019 Acorn Award winner, joined the Grill as head chef in 2019 at the age of 26, making him the youngest person to take on the role in the restaurant’s 88-year history.
The hotel recently completed a refurbishment of its Promenade restaurant and Artist’s Bar as part of a major revamp which was first announced in 2021.
