Flat Cap Hotels has appointed Martyn Fallon as group executive chef.
Fallon will work with all the Flat Cap restaurants to source local produce, create menus and train up both the senior and junior members of each kitchen.
He started his Flat Cap career at the Bridge in Prestbury, which won the 2021 Hotel Catey Award for Hotel Restaurant Team of the Year.
As executive chef, he is looking to bring in more sustainable, local food to the menu offering across the group’s hotels.
Prior to his new role, Fallon assisted the Rusacks hotel, St Andrews in regaining its three-AA-rosettes.
Fallon’s menu will be available at all Flat Cap restaurants in Cheshire, including the Bridge, Prestbury, the Courthouse, Knutsford and the Vicarage, Cranage.
Flat Cap Hotels was founded in 2015 by brothers and third-generation hoteliers Oliver and Dominic Heywood, who are both Acorn Award winners. All hotels are food-led destinations and are in buildings that have historical significance.
