Forés is remembered for introducing Filipino diners to her version of home-cooked Italian cuisine
Filipino chef and restaurateur Margarita Forés has died aged 65.
The Manila Standard reported she was found unresponsive in her hotel room after missing a lunch meeting.
Forés’ son, Amado, posted on Instagram: “It is with a heavy heart that I share the sudden passing of my Mom, Margarita A Forés. Our family is mourning this unexpected loss, and we kindly ask for your prayers during this time. We will be able to share more in due time.”
London-based chef Budgie Montoya, who is known for bringing his Filipino heritage into his dishes, commented: “My deepest condolences, your mom was a true icon and inspired so many! Prayers and thoughts to you and the family.”
In 1987, Forés was taught how to cook by three Italian signoras. This “home-style approach” to her food led her to pursue event catering and supper clubs upon her return to Manila.
Ten years later, in 1997, she opened her first Cibo restaurant, a modern Italian caffé-paninoteca inspired by similar establishments across Milan and Rome. The business has since grown to over 25 sites across the capital of the Philippines.
Forés later opened other restaurants in Manila, such as Lusso and Grace Park.
Her catering business, Cibo di M, also became the Philippines’ “choice caterer”, which resulted in Forés being recognised as the first non-Italian to receive the Marietta award by Casa Artusi in Emilia-Romagna, Italy, in 2013.
Cibo di M has served everyone ranging from the heads of state in the Philippines to presidents Bush and Obama.
Over the years, she has also demonstrated her commitment to future talent, having participating as a judge in the S Pellegrino Young Chef Award.
Forés was recently featured in the February 2025 issue of Tatler Philippines for introducing Italian cuisine to Filipino diners.
