Chris Zafeiropoulos has been appointed restaurant manager at Palé Hall Hotel & Restaurant in Llandderfel, Wales.
He joins from the three Michelin-starred Fat Duck in Bray, where he was based for almost a year.
He had also worked at the Michelin-starred Barn at Moor Hall in Ormskirk for four months, as well as at Doubletree by Hilton Chester.
Zafeiropoulos’ appointment comes soon after the new owners of Palé Hall, private buyers Anthony and Donna Barney of Baslow Holdings Developments, revealed plans to add another restaurant and a spa with an organic dining space to the property.
Angela and Alan Harper had owned the 22-bedroom, five-AA-red-star country house hotel set within 50 acres of landscaped gardens for the past decade before putting the property up for sale in February to coincide with their retirement plans.
The hotel dates back to 1871 and was refurbished in 2015. It also has a grand hall, reception room, library, dining room and bar.
Zafeiropoulos said: “The hotel owners want to raise the standards even higher and I am more than happy to be part of the progression to the next level.”
