Alfie Jebb-Crouch and Joe Winston have been appointed head chefs at Boys Hall in Kent.
The 17th-century manor house in Ashford was relaunched as a boutique hotel by husband and wife duo Bradley and Kristie Lomas in 2022.
Former head chefs at the property included Robbie Lorraine, guest judge on MasterChef: The Professionals, and Charlie Dilworth, who has since joined the Michelin-starred Lita in London’s Marylebone.
The kitchen is now being led by Winston, who has risen through the ranks of Boys Hall, and Jebb-Crouch, who was previously at the two Michelin-starred Hand and Flowers in Marlow and the Swan at Chapel Down.
The pair have committed to sourcing the majority of ingredients from suppliers operating within a 10-mile radius of Boys Hall, and have also been growing their own herbs and vegetables in the kitchen garden.
September dishes will include Longland Farm duck liver parfait with preserved Boys Hall cherries; John Dory from the south coast with local clams and sea herbs; and confit hispi cabbage served with miso glaze, blue cheese sauce, citrus slaw and walnut ketchup.
The announcement comes as the owners look to launch their first sparkling wine made from a single vineyard in Kent – Seventeen Sovereigns – and transform the former walled garden into a hideaway for guests.
There are also plans for new bedrooms and a treatment room.
