Chef Adam Stokes is to open a new £1.5m permanent restaurant in Birmingham's Waterloo Street in the New Year.
Adam and his wife Natasha have run the "pop-up" Adam's Restaurant in the city for two and a half years, but they will close it on 23 December and re-open in the new location on 26 January.
The 36-cover venue, housed in what was previously the offices of a bank, will have a chef's table that can seat an additional 12 people, as well as a private dining room that can accommodate a further 16. The current restaurant, which holds a Michelin star as well as three AA rosettes, seats 24 people.
The new Adam's will allow the pair to serve an à la carte menu, as well as the tasting menus that they currently offer.
In addition to the chef's table and private dining room, there will also be a wine cellar and development kitchen.
Adam was previously head chef of Glenapp Castle, before he opened his Birmingham pop-up in 2013.
He and Natasha are both originally from the Midlands, and Adam told The Caterer that it had always been the plan to open in the area. "There has been a lot of development here and there was no other choice than to come to Birmingham," he said.
