Will Holland is to join the Atlantic hotel as executive chef of the hotel's Ocean restaurant following the news last week that he was leaving his position as head chef at Coast in Pembrokeshire, Wales.
Holland first joined Coast in Saundersfoot, Pembrokeshire when it opened in April 2014, where he was recognised with two AA Rosettes for culinary excellence and the title of AA ‘Restaurant of the Year in Wales 2015-2016'.
Holland was previously head chef of La Bécasse in Ludlow, Shropshire, where he secured his first Michelin star before the age of 30. The Good Food Guide has previously named him one of ‘the 10 most influential chefs of the decade', and he also picked up an Acorn Award in 2009.
Concluding 13 years at the Atlantic, incumbent executive head chef Mark Jordan will remain at the helm of Ocean until the close of the summer season at the end of October. Jordan is yet to announce his next career move, however will continue to develop the nearby Beach restaurant he launched with Atlantic managing director and owner Patrick Burke in 2011. Holland will complete the summer at Coast before joining the Atlantic in October.
Burke said: "We are thrilled to be welcoming Will Holland to our team in October. There was a great deal of interest in the position from some of the finest young chefs in the country, however Will was the stand-out candidate and we are delighted to have secured him. We have great admiration for everything that Will has achieved in his career to date and have no doubt his appointment will further strengthen Jersey's growing culinary reputation."
