Double Catey award-winning chef John Campbell, executive chef and head of food and beverage at the Vineyard at Stockcross, has made some exclusive videos for Caterersearch.com.
In association with Fairy Expert, the new range of cleaning products from P&G Professional specifically designed for the professional kitchen, the videos illustrate some of the cooking techniques behind two of Campbell's dishes, risotto of wild mushroom, balsamic and pickled walnut jelly; and slow-cooked venison saddle, chou-croute and celeriac.
