Ramen restaurant group Tonkotsu is to open its first standalone restaurant outside London, in Brighton, this summer.
The brand has secured the former Polpo site on New Road, which it will open as a 50-cover restaurant in June. Eight outdoor seats will be available when the weather allows, and the menu is expected to be largely similar to the restaurant group’s existing sites.
It will be the 14th overall opening for Tonkotsu, which runs 12 restaurants in London and one within Selfridges in Birmingham.
Tonkotsu was founded in London’s Soho in 2012 by Ken Yamada and Emma Reynolds. The group secured a £5m investment from YFM Equity Partners towards its expansion in 2019.
