Tom Hine has been appointed head chef at the Seren Collection's Coast Restaurant in Saundersfoot, Pembrokeshire, following the departure of Will Holland.
Holland's last service will be on 1 October. He has been appointed executive chef at the Atlantic hotel, Jersey. The restaurant will then reopen four days later with Hine at the helm.
Hine was born in Padstow into a family of fishermen. He started his career at Rick Stein's Seafood Restaurant, Padstow, before moving on to Paul Ainsworth at Number 6 five years later.
He has also worked with chefs Sam Moody at the Bath Priory and Michael Caines at both Gidleigh Park and Lympstone Manor in Devon.
Hine said: "Coming from Cornwall, this opportunity is a great place to begin a new chapter for myself by the sea. I feel excited to have been offered this outstanding role and am looking forward to working with [the owners] Neil and Zoe to deliver an exciting seafood restaurant for Pembrokeshire."
Owners Neil and Zoe Kedward opened Coast in April 2014. It has since been awarded two AA Rosettes and the title of AA Restaurant of the Year in Wales 2015-2016 under Holland's watch.
The Seren Collection also operates the Grove of Narberth hotel and the Beach House restaurant at Oxwich on the Gower Peninsula.
