Tom Brown returning to the Capital hotel with new restaurant

The chef is launching a new project at the London hotel where he first made his name.

Tom Brown is set to return to the Capital hotel in London’s Knightsbridge to open a new restaurant this spring.


The move marks a homecoming of sorts for the chef, who rose to prominence working as head chef at Nathan Outlaw’s Michelin-starred Outlaw’s restaurant at the hotel.


Brown then went on to open his own Hackney-based restaurant Cornerstone in 2018, which won a Michelin star and the Newcomer Award at the 2020 Cateys for its seafood-focused menu. The restaurant permanently closed last year.


An announcement from the Capital hotel said the chef’s new 28-cover restaurant would feature “clean, creative and produce-driven cooking” showcasing “exceptional quality and innovative techniques”.


Brown said: “Returning to the Capital hotel feels like coming full circle. This is where I developed my style and found the confidence to go onto open Cornerstone. It’s a privilege to have my name over the door of a restaurant where legends of my industry have worked, and I in turn hope to make my mark.”


Solomon Khaddour, general manager at the Capital hotel, said: "We are delighted to welcome Tom back to the Capital hotel, bringing his extraordinary talent and culinary artistry back to Knightsbridge.


“His innovative approach to seafood will redefine the dining experience at our hotel, and this partnership is a celebration of both Tom’s incredible talent and the strengthened vision of the Capital hotel.”


Brown also runs the Pearly Queen oyster bar and seafood restaurant in Shoreditch.
