Belgian-based, ready-to-fill pastry manufacturer Pidy has expanded its Technipat frozen sponge sheet range with a new raspberry flavour. The sponge sheets are suitable for a range of applications, from layered cakes through to individual desserts or a classic opera cake with a raspberry twist. The frozen sheets have a shelf life of 12 months but can be defrosted in minutes.

The Pished Fish company has paired salmon’s nutritional credentials (omega-3 fatty acids, potassium and B vitamins) with alcohol and botanicals to a create a smoked salmon with a difference. Scottish salmon from supplier Loch Duart is used to make Dark & Stormy (rum, ginger, lime and agave nectar) and Erik the Red (aquavit, juniper, star anise and beetroot), as well as a non-alcoholic juniper and cherry-infused version.
