Jerry Adam, former chef at the Michelin-starred Ynyshir Hall and Llangoed Hall, is now head chef at the 18-bedroom the Swan@Hay hotel in Hay-on-Wye, Wales.
The 26-year-old joined the hotel at the beginning of March and is now assembling a new team, including a sous chef, chef de partie, and commis. He will now also focus on creating new dishes using locally-sourced products, and has plans to work on a kitchen garden to source his own ingredients.
The Swan@Hay hotel is the third hotel acquired by Langoed Limited â" as well as Llangoed Hall and the 49-bedroom Sudbury House near Oxford. It is currently undergoing a £1m refurbishment but is still open pending work to its interior.
Adam commented: âItâs an exciting challenge to become head chef and I am looking forward to cooking for local people and visitors. They can look forward to homely as well as exciting and innovative food and I plan to expand the menu with my own dishes in the coming months.â
Calum Milne, managing director of the Swan@Hay and Llangoed Limited, said: â[Adam] spent nearly three years at Llangoed Hall and I am delighted that [Brodie] has nurtured his talent. He is the youngest head chef in the group and will reinvigorate the food offer at the Swan.
