The Coal Shed to reopen with ex-Hawksmoor chef at the helm

Lewis Hannaford, formerly executive chef at the Hawksmoor Group, has been revealed as the new head chef for the Coal Shed in London ahead of its reopening on Thursday.

 

Hannaford, who has more than 25 years’ experience in professional kitchens, has been described as a “perfect fit” for the British steak and fish grill restaurant at One Tower Bridge, London.

 

The Coal Shed will relaunch with a new menu by Hannaford, featuring small plates including sea bream crudo with horseradish buttermilk, nori oil and kohlrabi, and large plates of Lake District lamb grilled rump and smoked beef short-rib for two. The menu will also offer a Sunday roast, designed for two to share, featuring 500g aged sirloin, beef fat potatoes, Sunday trimmings, Yorkshire pudding, beef jus and horseradish.

 

Dishes will prepared in the open kitchen, which showcases the specialist charcoal cooking for which the Coal Shed has become known.

 

To coincide with the new menu, the restaurant has also announced a partnership with Lake District Farmers, who will supply the finest rare and heritage breed cuts to the restaurant.

 

The Coal Shed is the final site to reopen from the Black Rock Restaurant Group, who also own the award-winning Salt Room and the original Coal Shed in Brighton.
