Shay Cooper is to leave the Goring hotel in London after five years as executive chef.
The news was announced two weeks after it was revealed that two-Michelin-starred chef Nathan Outlaw will head up the opening of a second restaurant, currently under development, at the five-red-AA-starred, 69-bedroom hotel. The yet-to-be-named restaurant is set to open in May following Outlaw's departure from the Capital hotel in nearby Knightsbridge.
Cooper arrived at the Goring in October 2013 from his previous role as executive chef of the Bingham hotel in Richmond, Surrey. He will leave the hotel later this year and it has not yet been announced where he is going.
Jeremy Goring, chief executive and the fourth-generation owner of the Goring, said that during his tenure at the Goring, Cooper had "established the dining room as one of the UK's most prestigious restaurants", which received a Michelin star in 2017.
"It's been an utter privilege to work with Shay, in my opinion he's one of the very best chefs in the country," explained Goring. "With his help over the last five years we've taken the Dining Room to a new level.
"Now we intend to continue building on that and take another big step upwards in our flagship restaurant. Looking forward, there is a lot of excitement within The Goring as to what 2019 will bring. With the announcement of our new restaurant and bar opening later in the year, it's the perfect time for a brilliant new chef to take command of the Dining Room and raise it to the next level."
