Shaun Rankin to open fine-dining restaurant at North Yorkshire's Grantley Hall

Chef Shaun Rankin is to return to his Yorkshire roots to open a fine-dining restaurant at Grantley Hall, the new luxury hotel and wellness retreat in North Yorkshire which is due to open in the spring.

 

He will operate the 38-cover Shaun Rankin at Grantley Hall while continuing to oversee Ormer Mayfair, his restaurant within the luxury, 129-bedroom Flemings hotel in London.

 

Located within one of the original public rooms in the Grade II*-listed, 47-bedroom property near Fountains Abbey, the restaurant will feature a chef's table for up to six guests and serve a menu using produce from the hotel's kitchen garden. Signature dishes will include Yorkshire rhubarb crumble soufflé with rosehip and iced clotted cream.

 

The restaurant will feature bespoke handmade furniture, crockery and glassware.

 

Originally from Yorkshire, Rankin has spent much of his career in Jersey, as well as enjoying stints in France, Australia and Chicago (where he worked for the late Charlie Trotter).

 

He first went to Jersey 24 years ago as demi chef de partie at Longueville Manor, before departing on his international travels. On returning to Jersey in 2003, Rankin joined Bohemia restaurant as head chef and gained a Michelin star two years later, when he also won the Menu of the Year Catey.

 

He went on to open Ormer on the island in 2013, with the restaurant winning a Michelin star four months later.

 

Rankin took over the restaurant at members' club 12 Hay Hill in London in 2015 and launched the 85-cover Ormer Mayfair restaurant in 2016 following the £15m refurbishment of Flemings, which he ran alongside the Jersey restaurant. However, 14 months later he ended his connection with the island.

 

In addition to Rankin's restaurant, Grantly Hall will also feature a Pan-Asian restaurant; an all-day dining restaurant; the Drawing Room, which will serve afternoon tea; and a spa lounge offering light meals and snacks.

 

Located on a private island with a lake and listed Japanese garden, Grantley Hall is nearing the end of a multimillion-pound restoration and extension. It is owned by the Yorkshire-based Sykes family.

 

General manager Andrew McPherson, who previously held the same role at Lucknam Park in Colerne, Wiltshire, is overseeing the transformation of the 17th century building into a hotel.
