Seren Collection’s Coast resturant in Saundersfoot will stop serving tasting menus from March following the departure of head chef Fred Clapperton.
The Coast opened in April 2014 and has since become known for its tasting menu dishes, which showcase Pembrokeshire produce.
Clapperton, who has been head chef of the restaurant for four years, announced plans to leave the business to be closer to his family.
The move has prompted chef director of Seren, Hywel Griffith, who is also head chef of the Michelin-starred Beach House in Oxwich, to drop tasting menus at the Coast and instead offer “a more informal style of dining” that hopes to attract more of the local community.
The Coast will close temporarily on 9 March, the day of Clapperton's final service, to allow the new team to settle and create new menus.
Neil and Zoe Kedward founded the Seren Collection in 2008 with the purchase of the Grove of Narberth in Pembrokeshire. The business has since expanded to five sites across Wales.
