Alex Bond, former chef at Restaurant Sat Bains with Rooms, is to launch his first restaurant on Derby Road, Nottingham, in July.
The 40-cover Alchemilla will occupy a former Victorian coach house and is currently undergoing refurbishment. Future plans include an extension upstairs to create a drinks terrace.
Bond has worked in a wide range of Michelin-starred restaurants including Auberge du Lac in Hatfield, Welwyn; Turners in Birmingham; and the Wild Rabbit in Kingham.
Since August 2015 he has been running supper club and events around the country.
The restaurant will serve a seasonal menu at lunch and dinner. For lunch, there will will be a selection of small plates available as well as a choice of three tasting menus. Two tasting menus will be offered at dinner.
Bond said: "I know modern British is a cliché, but that is what Alchemilla is all about. I don't believe we should eat as much meat as we do and so I have developed a style of cooking that is plant based. Vegetables can be just as good as any piece of meat, I'd like to show the depth of flavour that you can achieve when you allow vegetables to take centre stage, with a few supporting ingredients."
The team at Alchemilla includes chef Liam Sweeney, sommelier Sam Walker, and Grace Bond who will be responsible for creating Alchemilla's signature drinks and juices to complement the food menu.
"We really want to give our guests something different and to surprise and delight them with the flavour combinations and wine pairings," Bond said.
"My sommelier Sam has helped us to source some beautiful wines made from well-known grape varieties, but also from exciting lesser-known wine growing regions, such as India and Patagonia."
