Roux at Parliament Square reopens after refurbishment

The head chef of Parliament Square has inspired the design of the newly revamped Roux at Parliament Square.

 

Steve Groves is known for his classic dishes revisited with modern techniques and so the design by Rosendale Design has added a dark panelling lining to the walls of the Grade II-listed building, and contemporary influences have been introduced throughout with an on-trend grey, teal, and orange colour scheme.

 

A wine display now spans the back wall and the Drawing Room displays a selection of original architectural sketches of the building and surrounding area.

 

Groves said: "I love nothing more than putting my spin on a classic dish, and the fact that the restaurant's look and feel now reflects this is a real honour."

 

He is offering a tasting and set menu which includes dishes such as dartois of veal sweetbreads with corn and girolle mushrooms, Dorset crab with apple dashi, and plum with honey, jasmine and almond.

 

Michel Roux Jr added: "The re-design had to respect the building's Georgian history, but it was calling out for some modern touches too. The restaurant now blends the best of the past with current trends, which perfectly complements what Steve is doing in the kitchen."

 

Groves has been shortlisted for the Chef of the Year (public site) award at the 2017 Foodservice Cateys, while Roux at Parliament Square is in the running for Front of House Team of the Year (public site).
