Ross Stovold appointed head chef of the Torridon

Ross Stovold has been appointed head chef of the 1887 restaurant at the Torridon hotel in Wester Ross, Scotland.

Stovold joined from the five-AA-star, 20-bedroom hotel Seaham Hall in Northumberland, where he held the position of head chef for just over a year.

Before joining Seaham Hall, Stovold was head chef at the Isla of Eriska hotel and was heading up the kitchen when it was awarded a Michelin star 2014.

His previous experiences include the Michelin-starred Alimentum in Cambridge and two-Michelin-starred Restaurant Sat Bains in Nottingham.

At the Torridon, Stovold will be introducing a daily-changing and seasonal menu, with vegetables taking centre stage. Dishes include asparagus grilled in pickled pine spruce shoots and charcoal-dipped barbecued leek.

Stovold will also be involved in developing the produce in the two-acre kitchen garden and the farm, which is home to Highland cows and Tamworth pigs.

He said: "Dining at The Torridon's 1887 shouldn't just be about eating and then going home, it should be unrushed and experiential."
