Suffolk-based brewer Adnams has appointed Ross Bott as executive head chef of the Swan hotel in Southwold, Suffolk, which it is due to reopen next month following a £6m refurbishment.
Bott joins the hotel having most recently worked at Hawkyns restaurant and bar in Amersham, Buckinghamshire, which he helped launch earlier this year alongside chef-proprietor Atul Kochhar.
He began his career at La Tante Claire in London, working for Pierre Koffmann and has also worked at Paris House, Woburn, Bedfordshire; Danesfield House, Marlow, Buckinghamshire; and Macdonald Compleat Angler, also in Marlow.
Bott said he was excited to be part of project which has the ambition to be the best hotel and restaurant in the area.
"The Still Room and the Tap Room will each offer something different but at the heart of both will be a commitment to providing the best food and drink experience possible," he said.
Lyndon Barrett-Scott, general manager at the Swan, added: "The Swan will provide impeccable service that gives visitors a truly memorable stay and having Ross on board ensures this experience extends into the dining room and onto the plate."
The Still Room and the Tap Room are set to open alongside the hotel on 12 October.
