Peter Sanchez-Iglesias' new restaurant Decimo opens in the Standard London hotel, King's Cross, on 10 October serving up Mexican and Spanish flavours in a 10th floor dining room.
The executive chef, behind Michelin-starred Casamia and Paco Tapas in Bristol, said: “Decimo is all about bringing Spanish and Mexican food together. The combination of my Spanish roots combined with my research and fascination with Mexico, where I was massively inspired by the completely new, yet familiar flavours. This sparked the concept of bringing Mexican influence and technique into our favourite cuisine - Spanish, and showcasing fantastic British produce to execute the menu alongside some of the most renowned artisan drinks producers in Spain and Mexico."
The 114-cover restaurant will offer panoramic views of the city through the floor to ceiling windows encircling the space. Reached via a red lift from Euston Road, it includes an open kitchen, bar area and two private dining rooms.
Dishes will include jamon croquetas, caviar-topped tortilla, a table-side prepared Caesar salad, a vegan mushroom paella, suckling pig shoulder, XL langoustines and rib of beef. There will be a la carte service and two Chef’s tasting menus priced at £65 or £95 per head.
The drinks programme will include an agave offering designed by Niki Nakazawa as well as a selection of mezcals and racillas made using traditional methods in clay, copper or hybrid stills.
