Peter Avis takes over from Fred Sirieix as general manager at Galvin at Windows

Peter Avis has been named general manager of Galvin at Windows, talking over from Fred Sirieix who left the restaurant in the London Hilton on Park Lane last year.

 

Avis was restaurant manager at Virgin Group’s and Babylon Restaurant until its closure in 2018, since when he has been undertaking a number of consultancy projects.

 

Galvin Restaurants founder Chris Galvin said that Avis was a natural fit for the restaurant.

 

He added: “Taking Galvin at Windows into a new decade is an exciting new project and to welcome Peter Avis as the new general manager is perfect timing.

 

“Our plans for the future meant that we have worked hard to develop new dishes, service styles and our new bar 10°- while looking at making the restaurant more accessible.

 

“Peter comes from the perfect stable to suit Galvin at Windows. He possesses gold hallmarks, which we look for in service and is totally customer focused. Such is his ability to hit the ground running, it already feels like we have worked together for many years.”

 

Avis won the Restaurant Manager of the Year competition in 2019 and was named Manager of the Year at the 2014 Cateys.

 

He said: "I'm incredibly proud to join the team at Galvin at Windows, to help redefine the business to ensure we continue to be recognised as a unique restaurant and bar offering within London, and oversees.

 

“I look forward to working with Chris Galvin and the talented culinary creatives at the wider company, who are recognised far and wide for their passion for French cuisine and delivering exceptional customer service. I am excited to continue the great work with the front of house and kitchen teams to bring Galvin at Windows to even greater heights."

 

Fred Sirieix

 

Sirieix, who had been at the restaurant for 14 years, announced his departure in December. He is figurehead for front of house workers, campaigning for greater recognition of their skills and dedication as well as establishing National Waiters Day, which is now in its seventh year.

 

Galvin at Windows held a Michelin star for a decade. It was one of 16 restaurants to lose the accolade in the 2020 Guide.
